Marinated Eggplant and Tofu with Greens

Eggplant is i of those veggies I ever forget about.  I don't oft innovation to brand recipes alongside eggplant , it never pops out from the create shelves at me , too if I arrive at larn by to larn i inwards the cart too into my refrigerator , I oft forget close it until it is by its veggie prime.  Not this time!

I brought i dwelling too was determined to operate it upwards too brand something yummy!  Once I got dwelling from the shop I cubed it , threw it inwards a plastic handbag alongside a overnice marinade... too permit it sit down at that spot for a few days... marinating too totally non forgetting close it. ;)

I decided to create it upwards this morning time spell my petty murphy napped too threw inwards some extra theatre tofu to soak upwards some of the excess sauce.  Add inwards some greens , serve on travel yesteryear of dark-brown rice , too yous totally accept a fantastic , filling lunch.

Marinated Asian Eggplant alongside Tofu too Greens
Time: iv hour-2 24-hour interval marinade , 5 infinitesimal prep , twenty infinitesimal saute

Ingredients:
    Eggplant Marinade:
        1 pocket-sized eggplant , travel yesteryear trimmed off , cubed
        2 Tbsp sugariness carmine chili sauce
        1 Tbsp teryaki sauce
        1 Tbsp soy sauce
        1 Tbsp rice vinegar
        1 Tbsp sesame seeds
     
    Saute:
        Eggplant Marinade (do non drain)
        1- 12 to fourteen oz block extra theatre tofu (I used Soyganic Organic Extra Firm Tofu)
        4-6 cups chopped nighttime greens (I used kale.)

    Green onions too sriracha to top

Instructions:
1.)  Put all of the marinade ingredients inwards a medium sized ziplock bag.  Seal too give a expert toss.  Let marinade , tossing occasionally , for iv hours or upwards to ii days.
2.)  After the eggplant has marinaded , prep the remaining ingredients.  Drain too pat the tofu dry out , gently squeezing out some of the excess wet earlier yous cube it.
3.)  Over medium-high estrus , add together the cubed tofu too eggplant , reserving the extra juices from the marinade.  Saute , adding the residuum of the marinade gradually.  Continue to saute until most of the liquid has evaporated (10-15 minutes).
4.)  Reduce estrus too add together the greens.  Stir inwards too estrus until lightly wilted too vivid green.
5.)  Serve hot over dark-brown rice too travel yesteryear alongside chopped dark-green onions too sriracha if desired.



's Notes:
If yous accept to a greater extent than foresight than I arrive at , yous could too marinade the tofu alongside the eggplant , exactly this is non necessary.  Smart , exactly non necessary.
